Pineapple is rich in healthy nutrients. It is rich in Vitamin C, Beta Carotene and a great source of Manganese.So it can be included in our diet in various ways. Pineapple is called Anaras in Bengali and the chutney made from it is Anarosher Chutney.Different regions have different style of making this chutney.Here it is made in a traditional Bengali style which is served as a condiment at the end of a meal before serving dessert along with papad. It is prepared on special occasions like Poila Boisakh or other festive feasts or wedding parties.It is a pure Bengali delicacy where small chunks of pineapple is cooked with pineapple juice, dry red chillies, sugar,salt, raisin, lemon juice and some water.

Ingredients

15 minutes
3 to 4 servings
  • 1 cuppineapple cut into small cubes
  • 1 cup (250 ml)pineapple pulp
  • 1/2 cupsugar or to taste
  • 1/4 tspblack salt or regular salt
  • 8-10golden raisins
  • 2dry red chillies deseeded and chopped finely
  • 1/2 cupwater
  • 2bay leaves
  • 1 tbsplemon juice

    Peel the hard outer skin of pineapple with a knife.Remove the small dots or eyes with the tip of a knife. Cut the pineapple vertically into 4 pieces.Then remove the hard central part.Chop a portion of pineapple into small chunks. Chop another 1 cup cubed pineapple and blend in a mixer grinder to a paste.Strain the paste to get a smooth pulp.Boil water in a pan and add the sugar along with bay leaves.

    When the sugar dissolves add the pineapple chunks and the strained pulp.Cook on high flame till the pineapple is soft and the juice gets one string consistency. The chutney will now get a shiny look.Sprinkle desseeded and chopped dry red chillies and the raisins.Mix well and boil for 1 minute.Remove from heat and add lemon juice.Stir gently and set aside to cool.Serve chilled.
