This is a iron rich recipe as main ingredient is beetroot which is a rich source of iron . Beetroot sar is a recipe which very healthy as we are using fresh coconut milk in it.

This is a iron rich recipe as main ingredient is beetroot which is a rich source of iron . Beetroot sar is a recipe which very healthy as we are using fresh coconut milk in it.
Steps

Wash beetroot 2 -3 times with fresh water and then cut into pieces and take 3 whistles in a cooker.

In the mean time transfer the grated coconut to a mixture jar and grind.Now add water and grind again, then transfer it to a strainer to get fresh coconut milk.

Now remove the skin of beetroot and transfer to mixture jar and grind add water (use the excess water which we have used for cooking beetroot.)
now transfer it to strainer and strain it. - 4
Now heat a kadai and add desi ghee once heated,add cumin seeds, as they splutter add asafoetida and grated coconut (which we get after extraction of. Coconut milk) and saute it. Add kokum.

Now add mixture which we got after straining beetroot. From 1 medium beetroot we get it 2 cups.

Once it is boiled add salt,red chilli powder and coconut milk. After adding coconut milk don't boil it just keep the flame for 2 minutes at low.

Enjoy this delicious beetroot sar when it is hot.
