Radish is one of my favorite vegetables, full of healthy nutrients -- vitamin C, folate, high in immunity and Low in calories. It is a highly nutritious, tasy and flavorful recipe. Even those who don't like Radish (Sridhar) love Radish Coconut Rice. So I camoflaged the radishes in this recipe with coconut.

Soak the rice in 2 cups of water for 20 minutes in a bowl. drain Then add to the rice cooker. Add coconut milk, 2 cups of boiling water and lemon grass and cover and turn on the cooker. After the rice is cooked, the cooker will automatically turn off.

While the rice is cooking, take care of the rest of the work.
Heat oil in a pan over medium heat then add mustard. After mustard seeds burst open, add cumin, fennel seeds, fenugreek seeds, curry leaves, jalapino chili (very hot) and sauté until aromatic.Add nad Saute onion and ginger; Do not brown the onions. Add grated radish, leaves and saute for 5 minutes. Add grated coconut, stir for 1 minute, do not change color of the coconut, add salt to taste and turn off the stove. - 5
Dry roast cadshews in a microwave using a microwave safe plate. The stirfried radish plus coconut mix is ready. Open the cooker lid and add the radish coconut mixture and gently mix with a spatula. Taste to see that the coconut rice meets with your expectations Add salt if needed and mix without breaking the rice. Garnish with dry roasted cashews and chopped coriander leaves.
Transfer to a serving bowl/ plate. Serve hot. You may serve with chips, stir fried veggies, raitha and etc
