Sprinkle the vegetables with salt.

Grill the vegetables on a hot grill pan.

To make the sauce, sauté the garlic and hot chili pepper in oil, then add the vinegar. Add the tomato paste, tomato juice, salt, and spices. Let the sauce simmer until thickened.

Layer the eggplant in a dish and spread some sauce over it. Add the zucchini and more sauce, then the bell peppers and the remaining sauce. Serve and enjoy.
