To begin, blanch the tomatoes. Peel off the skin. Pulse in a mixer 4 to 5 times. It should be chunky. Keep aside.

Boil the spaghetti in salted water as per the instructions on the package until al dente. Drain well and keep aside. Save about a cup of the pasta water.

Heat oil in a pan. Add in the onions and garlic. Saute until translucent.

Add in the halved cherry tomatoes with 1/2 tsp salt and chiili flakes. Saute for a minute or two.

Next add the blanched tomatoes with sugar, crushed black pepper, and 1/2 cup torn basil leaves. Cook for 15-20 minutes until the tomatoes are done and the sauce thickens a bit.

Next, add the boiled spaghetti with 15-20 whole basil leaves. Mix well. Cook the spaghetti in the sauce for 2-3 minutes. Be careful not to overcook. You can use some pasta water if the sauce is too thick.

The Spaghetti al Pomodoro is ready to serve. Grate some cheese on top and garnish with a sprig of basil leaves.
