Prepare all the ingredients.

Make the fish stock.

Remove the monkfish meat from the bones. I used a whole monkfish head.

This is the espresso cup used for measuring.

Prepare the vegetables.

Start with the onion.

Next, add the peppers.

Mince the garlic and measure the paprika.

Brown the mackerel, cut into bite-sized pieces. Brown the shrimp as well and set aside.

Sauté the vegetables in a little oil in the paella pan. When they're well softened, add three espresso cups of noodles.

Toast the noodles with the vegetables. Then add the mackerel. Next, add 3 1/2 espresso cups of fish stock. Garnish with the shrimp. In about 8 to 10 minutes, the fideuà will be ready to eat!
