Lately, I've been trying various gluten-free recipes for my best friend, and so far, she's been satisfied with all the desserts. She said she's never had gluten-free desserts this good since she became celiac, not even from places that make them artisanally. So give it a try! 🥰🥰

In a bowl, combine grated carrots, coconut flour, almond flour, baking powder, sugar, and Greek yogurt.

In another bowl, beat the eggs, then add them to the carrot mixture.

Chop the chocolate into pieces and add it to the mixture.

Grease and dust a 9-10 inch pan with almond flour or potato starch. Fill and level the mixture.

Bake in a preheated static oven at 390°F (200°C) for about 30 minutes. The time may vary depending on your oven and the height of the cake in the pan. It should remain nice and soft and moist.

Let it cool, sprinkle with powdered sugar, and enjoy.
