Ingredients

12 servings
  • 1 1/2 cupscoconut flour (about 150 grams)
  • 1 1/2 cupsalmond flour (about 150 grams)
  • 3 cupsgrated carrots (about 300 grams)
  • 3/4 cupsugar (about 150 grams)
  • 3large eggs
  • 1 packetbaking powder
  • 1 containerGreek yogurt
  • 3 1/2 ozdark chocolate (about 100 grams)
  • Gluten-free powdered sugar

Steps

30 minutes

    In a bowl, combine grated carrots, coconut flour, almond flour, baking powder, sugar, and Greek yogurt.

  2. 2

    In another bowl, beat the eggs, then add them to the carrot mixture.

  3. 3

    Chop the chocolate into pieces and add it to the mixture.

  4. 4

    Grease and dust a 9-10 inch pan with almond flour or potato starch. Fill and level the mixture.

  5. 5

    Bake in a preheated static oven at 390°F (200°C) for about 30 minutes. The time may vary depending on your oven and the height of the cake in the pan. It should remain nice and soft and moist.

  6. 6

    Let it cool, sprinkle with powdered sugar, and enjoy.
