Two of my grandparents were Lebanese so I grew up eating Middle Eastern food. This is my favorite way to eat yams. The recipe may not be strictly Lebanese but I feel it connects me to my roots.

Ingredients

45 minutes
4 servings
  1. 2large yams
  2. 1 tablespoonvegetable oil
  3. 2 teaspoonssumac
  4. 1 teaspoonkosher salt
  5. 1/2 teaspoonground black pepper
  6. 2 tablespoonshoney
  7. Pinchcayenne pepper

Cooking Instructions

45 minutes

    Preheat convection oven to 410F.

  2. 2

    Peel and dice yams into similar size pieces.

  3. 3

    In a large bowl combine rest of ingredients.

  4. 4

    Add yams and mix to cover with spices.

  5. 5

    Line pan with parchment paper. Distribute yams so that pieces don't touch each other.

  6. 6

    Roast for 12 minutes. Turn pieces with tongs and roast for 12 more minutes. Serve immediately.
