Roasted kombucha squash

Cooking Instructions

Preheat oven to 400 degrees.

Put whole kombucha in oven to soften for 15 minutes.

Take kombucha out of oven, cut in half and scoop out seeds and stringy insides.

Cut kombucha into cubes, cutting off skin as you do.

Place cubes in zip lock and add coconut oil, cinnamon and salt. Make sure zip lock is closed and mix around with hands until all pieces are coated.

Place on cookie sheet and bake for 25 minutes or until tender.

All done! Enjoy

We've been bringing home summer squash by the pound in our local CSA share, and this is a simple, delicious way to use up a lot of it all at once. I use gochujang-- Korean red pepper paste-- to spice this soup, but if you don't have it on hand a squeeze of lemon juice, some salt and pepper, or a dash of tobasco will do just fine.
