Make the bánh bèo batter:
- Rinse the brown rice thoroughly, then soak it in water overnight until the grains are soft.
- Place the soaked rice and water in a blender and blend several times until completely smooth. Do not strain.
- Pour the blended rice mixture into a bowl, add the tapioca starch and salt, then weigh the mixture. If it weighs less than 1 3/4 pounds (800 grams), add more water until it reaches 1 3/4 pounds (800 grams). Stir well and let the batter rest for 30 minutes. - 2
Prepare the toppings:
- Roughly crush the roasted peanuts.
- Finely chop the green onions, then combine with 3 tablespoons vegetable oil. Microwave for 30 seconds to make scallion oil. - 3
Steam the bánh bèo:
- Fill a large pot with enough water so it just touches the bottom of the steamer rack. Bring to a boil over high heat. Once boiling, pour the batter into small bowls and place them in the steamer. Steam for about 7 minutes until cooked through (no need to grease or preheat the bowls).
