Noodle Stew

Finely chop the beef (I used sirloin tip, about 10 1/2 oz/300 grams). Heat a pot or saucepan with a splash of oil, add the beef with salt, pepper, and your preferred seasonings. Stir well and sauté the beef until browned.

While the beef cooks, finely chop the vegetables and add them to the browned beef.

Stir everything together, cover, and let the vegetables cook down and soften. If you want a richer color and thicker consistency, add tomato sauce or tomato puree at this stage.

Once the mixture has dried out and starts to fry, add 1 1/2 cups of water (about 355 ml) and let it cook for about 15 minutes. After that, add your choice of pasta (I used small shell pasta) and add another cup of water (about 240 ml), enough to cover the pasta.

Cook for 10 minutes until the pasta is tender and has absorbed the liquid. Remove from heat and serve hot with grated cheese.
