Perfect for the start of winter, this is a light, nourishing soup especially suitable for those with a warm constitution. Add the ingredients to the rice cooker in two stages as described below.

Rinse the pork ribs and drain. Place the ribs, astragalus root, and red dates (make a small cut in each date) into the inner pot. Add water. Do not cover with the inner lid. Add 1 rice cooker cup of water to the outer pot, then start the rice cooker.

Place the dried shiitake mushrooms in a ceramic bowl, add some hot water, and microwave for 2 minutes. Set aside.

Peel and cut the winter melon into chunks. Prepare the ginger strips and set aside.

When the rice cooker switches off, skim off any foam. Add the ginger strips, shiitake mushrooms (with their soaking water), and winter melon. Gently add the winter melon by hand or with tongs to avoid splashing. Add another rice cooker cup of water to the outer pot and start the rice cooker again.

When the rice cooker switches off again, add the salt and goji berries. Cover with the outer lid and let it sit for 5 minutes before serving.
