Ingredients

15m +10m + 12m/batch
5 serving size waffles
  • Dry ingredients
  • 1 cupcake flour
  • 2 tbsppowder sugar
  • 1 tbspcorn flour
  • 1/4 tspbaking soda
  • 1 tspbaking powder
  • Wet ingredients
  • 2 tbspbutter
  • 1/2 tspvanilla essence
  • 2 tsplemon juice
  • 1 cup(and a little more) milk
  • 5 tbspmelted butter to cook the waffles
  • To serve with
  • 5 scoopsvanilla ice cream (or an ice cream of your choice)
  • 10 tbspchocolate sauce or any fruit sauce
  • 10 tbspchopped nuts like almonds and pistachio

Steps

    Combine all the dry ingredients and keep aside. Combine butter, vanilla essence, and milk and whisk well.

    Add lemon juice in the milk just before combining wet and dry ingredients. Mix well and add this liquid little at a time in the dry mixture. Combine with a whisk and add a little more liquid. It is important to add a little liquid at a time in order to avoid lumps in the batter. Rest it for 10 min. Whisk once again to make it smooth. It should be smooth, flowing and at ribbon consistency. Check the video to see the consistency.

    Heat up the waffle machine. Grease it with butter using the silicone brush. You must grease the bottom and the lid both. Otherwise, the waffle will stick to the machine. Pour about 1 ladle (or a little less) of batter for 1 waffle. Cover the lid and let it cook until they are crisp just how you like. I prefer medium crisp because they are spongy within that way.

    Make crisp cross cuts on the waffle. Put a scoop of ice cream. Drizzle the sauce of your choice and sprinkle some nuts. You may also sprinkle some berries. You can use the same toppings as used on the pancakes. Enjoy when the waffles are still hot!

    Sweetened strawberries as topping: chop strawberries and add sugar to it. Around 10 strawberries may need 4 tsp sugar. let the sugar melt. Use it to pour on the waffle.

    Mixed berries in syrup: You can chop mixed berries like blue berries, blackberries, strawberries, etc. Combine them with sugar. Cook it in a non-stick pan until the water content burns and the syrup feels sticky like the syrup for gulab jamun. It's ready. Let it cool and use it as a toping on the waffles.

    I tried making waffle sandwich by spreading ice cream, whipped cream and syrups, etc. But it didn't taste as good. The ice cream also melted down completely. It wasn't convenient to eat. A scoop of ice cream on a hot waffle with a drizzle of sauce is the best combo.
