Granola Energy Bars

It’s summer in Malawi, which means my kitchen currently feels like the surface of the sun. Naturally, I have decided that cooking is a luxury reserved for cooler times of year (or people with better air conditioning). Luckily, l have got a stash of trusty granola bars to grab and go—just enough energy to dodge the stove while still keeping me on my game.

This week’s stars are flax seeds and oats, two kitchen MVPs that I almost always have on hand. Flax seeds because, well, fiber and omega-3s, and oats because they are like the culinary equivalent of a trusty sidekick: simple, reliable, and in everything (almost). So here I am, fueled up and kitchen-sweat-free, all thanks to these handy bars that l hope you get to enjoy too my Cookpad pals 😜

Ingredients

25 minutes
Makes 8 to 12 bars
  1. 1 2/3 crolled oats
  2. 1/3 coatmeal flour
  3. 2/3 cbrown sugar (less or more)
  4. 1/4 tspcinnamon powder
  5. 1/4 cflax seeds
  6. 1/4 csunflower seeds
  7. 1/4 cpumpkin seeds
  8. 1 Tbspchia seeds (optional)
  9. 1/4 cmelted butter or coconut oil
  10. 1/4 choney or maple syrup
  11. 1 Tbspwater
  12. 1 tspvanilla extract
  13. Pinchsalt

Steps

25 minutes
  1. 1

    Preheat the oven to 175C. Line a desired pan with parchment paper and set aside

  2. 2

    Thoroughly combine all ingredients in a large bowl. Spread mixture in the prepared pan and firmly pat down for stable bars once cooked

    Bake for 25 minutes or until golden around the edges

  4. 4

    Take out of the oven, loosen the edges and cool for about 5 minutes in the pan.
    Using a sharp knife or bench scraper, cut the bars while still in the pan and carefully transfer onto a wire rack to cool completely

    Individually wrap cooled granola bars with plastic wrap and consume within a week. These can be kept in a cookie jar on your kitchen counter or in the refrigerator according to preferrence
