Dhaba Style Spinach Mushroom 🍄🟫

Once I eat this Subzi @ Jodhpur dhaba while coming from Ahemdabad & loved the taste & creamy texture of spinach but no cream is there
I asked the cook how you prepare it taste amazing then he told me the trick & I prepare this Subzi after one year when some guests come to my home & after eating this veg they appreciate so much & telling me you prepare this or it’s from DHABA then my husband told them she prepare this . Cooking is her PASSION

Boil water on gas with little salt & sugar; when water boils add garlic pod, almonds & spinach for blanching after 2 minutes remove from gas sieve it & wash it with cold water & & keep in ice cold water so cooking stop

Now remove from ice water & put in mixer & blend it nicely remove the spinach purée in a bowl & put some water in mixer churn it so all palak purée water will come & remove from mixers in a bowl & keep aside

Heat ghee/ oil in a pan add jeera when it starts crackle add chopped garlic & green chili sauté it for 30 sec
Add onion 🧅 sauté till it translucent add chopped tomato 🍅 & salt cook approx 5 minutes till tomato little mashy - 4

Add red capsicum & big green chili mix it & add all spices ; cook for 2-3 minutes now add mushrooms 🍄🟫 mix it nicely with all ingredients; add spinach water & cook for 2-3 minutes now add spinach purée & chopped ginger 🫚 mix it well & switch off the flame

Remove in a serving bowl & enjoy with choice of your bread.. chapati, naan tandoori roti or laccha paratha
