Inspired by the way street vendors prepare blanched vegetables, but with an added stir-fry step.

Wash the water spinach and cut it into sections for later use.

Heat oil in a pan and sauté the minced garlic and fried shallots until fragrant. Add the water spinach and stir-fry, adding a suitable amount of oyster sauce and water. Stir until the vegetables are cooked and evenly coated with the sauce.
