Amritsari Ajwaini Matar Paneer is a popular and delicious North Indian curry made with fresh or frozen green peas and Paneer ( Indian Cottage Cheese).It has a rich creamy gravy of onions,ginger garlic paste, tomato puree,poppy or sesame seeds, cashewnuts, fresh cream, ajwain, spices and herbs. Ajwain adds a special flavour to many of North Indian cuisine. Serve this flavourful curry as a side dish with any Indian flatbread or stuffed paratha in lunch or dinner.

To begin making Amritsari Ajwaini Matar Paneer, heat 1 tbsp oil in a pan. Lightly fry the onion, cashewnuts, green chillies and set aside to cool.Meanwhile crush ajwain and sesame or poppy seeds along with curd and set aside.

Make a fine paste of onion,cashewnuts and green chillies adding 2 tbsp water. Set aside. Heat 3 tbsp oil in a pan and sprinkle ajwain and cumin seeds. Then add half crushed whole garam masala.When they sizzle, add hing. Now add the ground onion paste, ginger garlic paste and saute for few minutes on medium flame till there is no raw smell. Add crushed ajwain, sesame seeds paste.Stir in turmeric powder,Kashmiri Red Chilli Powder, Kitchen King Masala, roasted cumin powder, garam masala.

Add tomato puree, fresh cream and crushed kasoori methi. Stir for few minutes adding ghee till oil leaves sides.If using fresh peas, boil for 5 minutes with 1/4 tsp salt till soft.Omit this step if using frozen peas.Add the peas to the masala and toss to mix well.Add 1 cup water and cook for 5 minutes. Add in the paneer cubes.They may be lightly fried before adding to the gravy, but optional. Sprinkle garam masala, chopped coriander and toss lightly to mix well.

Serve hot with roti, paratha or naan in lunch or dinner.
