In a bowl, mix together all the dry ingredients: flour, baking powder, and cinnamon.

In the bowl of a mixer, add the butter, both sugars, and vanilla. Beat for 1 minute until the mixture is light and fluffy. (If you don't have a mixer, you can use a whisk or simply mix by hand.)

Stop the mixer, add the egg, and mix with a spatula until fully combined. Add the dry ingredients from the bowl and the salt.

Knead the dough by hand; it will be quite soft. Divide into 18 pieces (or as many as you like) and roll each into a ball, about 1 ounce (30 grams) each. If the dough is too sticky to handle, scoop portions with a spoon and place them directly onto a baking sheet lined with parchment paper.

In a small bowl, mix 2 tablespoons sugar with 1 teaspoon cinnamon. Dip just one side of each dough ball into the mixture. Place them on two baking sheets lined with parchment paper.

Gently press each ball with your hand or a fork and bake in a preheated oven at 350°F (180°C) with convection for 12-15 minutes.

Let the cookies cool for 20-30 minutes before serving. Enjoy!
