Ingredients

  1. 3bell peppers (different colors)
  2. 1small red onion
  3. 1 1/2 tablespoonsolive oil
  4. 1 teaspoonkosher salt
  5. Several turns freshly ground pepper
  6. 1/2 teaspoonchili powder
  7. 1/2 teaspoongarlic powder
  8. 1/2 teaspoononion powder
  9. 1/2 teaspoonground cumin
  10. 1/2 teaspoonsmoked paprika
  11. 1 1/2 poundspeeled and deveined shrimp (fresh or frozen)
  12. to tasteLime
  13. Cilantro to garnish
  14. Warm tortillas

Steps

  1. 1

    Preheat oven to 450 degrees

  2. 2

    Slice your onion and bell peppers into thin slices

  3. 3

    Combine shrimp (make sure to defrost if using frozen), bell pepper slices, onion slices, olive oil, salt, pepper and spices. Mix well.

  4. 4

    Place your fajita mixture on a lined baking sheet, making it as even as possible.

  5. 5

    Cook in oven for about 8 minutes or until shrimp is cooked through.

  6. 6

    Take baking sheet out of the oven, and squeeze fresh lime juice over fajita and add cilantro for garnish.

  7. 7

    Serve with warmed tortillas.

  8. 8

    You can substitute your protein just make sure to adjust your cooking time accordingly.
