Potato Cabbage Casserole

Cooking Instructions

Put potatoes in a pot. Add enough water to cover potatoes. Cook over medium heat for 30 minutes.

Fry chopped bacon in a large skillet until brown & crisp. Remove fried bacon to small bowl using a slotted spoon, reserving 2 tbsp pan drippings.

Preheat oven to 375 degrees. Spray a 3 qt baking dish with nonstick cooking spray.

Add reserved drippings to skillet over low heat. Stir in onion powder, flour, thyme, & salt. Add broth & milk. Mix well. Cook over low heat, stirring continually, until sauce has thickened.

In prepared baking dish, layer cabbage, potatoes, bacon, swiss, & sauce one half at a time. Repeat layering.

Bake, covered, for 30 minutes. Remove cover. Bake until cabbage is tender, about 15 minutes.

I wanted to add more vegetables to my diet. So I thought of making a vegetable casserole for a dinner. I wanted the casserole to have three components: vegetables, a sauce, and a topping. After some research I came up with this recipe. I thought the flavoring of the potato and zucchini and squash would go really good together. It's also flexible. You can add to or change the squash to another vegetable. I've added broccoli.I hope you enjoy it as much as my family did. My family even had seconds on this so it was a great success. Bon Appétit!
