A cook at our friend's house used to make something alike about 20 years ago. We have a faded memory of it. Today when I had some boiled potatoes leftover, I thought of that cook and tried making it. We loved it. Potatoes make the thepla very soft. It's a joy to eat it..no need of any sauce/chutney/achar.

A cook at our friend's house used to make something alike about 20 years ago. We have a faded memory of it. Today when I had some boiled potatoes leftover, I thought of that cook and tried making it. We loved it. Potatoes make the thepla very soft. It's a joy to eat it..no need of any sauce/chutney/achar.

Peel the boiled potatoes and grate them. Combine all the ingredients except the oil to stirfry. Make dough without adding water. If the mixture is very mpistured, you can add more flour. Knead it well. Let it rest for 5 min.

Roll thepla and stirfry on a moderately hot pan, keeping the heat high most of the time. Use oil in moderate quantity so the theplas are cooked soft.

Serve hot.
