In a large bowl, combine the dry dough ingredients and mix well. In 2 cups of warm water, add the olive oil and vinegar, stir, then pour over the dry ingredients.

Knead the dough until it comes together (add more warm water gradually as needed until the dough forms). Cover and let rise in a warm place until doubled in size.

To prepare the filling: Chop the spinach, wash, and dry thoroughly. Dice the onions and tomatoes. Combine all the filling ingredients and mix well.

After the dough has risen, divide it into balls. Roll each ball into a circle, add a generous amount of filling, and seal the pastries.

Arrange the pastries on baking trays (grease the trays with vegetable oil before placing the pastries). Brush the pastries with vegetable oil and bake in a preheated oven at medium-high heat until golden. Serve warm.

Dip in pomegranate molasses when eating for extra flavor.
