Chicken Breasts in Mushroom Sauce

Cooking Instructions

Season the chicken breasts with salt and pepper. In a skillet, heat a little olive oil over high heat and sear the chicken breasts until golden brown on both sides.

Remove from the heat and set aside. In the same skillet, add the chopped onion and cook over medium heat until translucent. Add the minced garlic and cook for one more minute.

Add the sliced fresh mushrooms (I used canned mushrooms as I didn't have fresh ones) and cook until tender. Add the chicken broth and let it reduce by half.

Lower the heat and add the heavy cream and butter. Mix well.

Return the chicken breasts to the skillet, including any juices they released. Spoon the sauce over the chicken. Cook over low heat until the sauce thickens, about 10 minutes.

Sprinkle fresh parsley on top.
