Ingredients

  • For the Pulao:
  • 1 cupBasmati Rice (soaked for 30 minutes)
  • 1 cupThick Coconut Milk
  • 1 cupWater
  • 250 gmsMixed Vegetables (carrot, beans, cauliflower, green peas)
  • 1Onion, sliced
  • 4Green Chilies, slit
  • 20Cashews
  • Salt, to taste
  • Pounded in Mortar and Pestle:
  • 2-inch Ginger
  • 8-10Garlic cloves
  • For Tempering:
  • 2 tbspCoconut Oil
  • 1 tspCumin Seeds
  • 1 tspFennel Seeds
  • 1/2 tspBlack Peppercorns
  • 1Bay Leaf
  • 4Green Cardamom
  • 1Cinnamon Stick
  • 8Cloves
  • For Garnish:
  • 2 tbspFreshly Chopped Coriander Leaves
  • For Raita:
  • 1 cupThick Yogurt
  • 1small English Cucumber, finely chopped
  • 1small Tomato, finely chopped
  • 4Shallots, sliced
  • Salt, to taste
  • 3Green Chilies, finely chopped
  • 1 tbspChopped Coriander Leaves

Steps

Total Time: 50 minutes
  1. 1

    Soak the Rice:
    • Wash the basmati rice thoroughly and soak it in water for 30 minutes.

    Prepare the Coconut Milk Mixture:
    • In a bowl, combine thick coconut milk with water. Stir well and set aside.

    Prepare the Ingredients:
    • Rinse and chop all vegetables.
    • Crush ginger and garlic in a mortar and pestle.
    • Keep all spices and cashews ready.

    Cook the Coconut Milk Pulao:
    • Heat coconut oil in a non-stick pan. Add cumin and fennel seeds, letting them sizzle.
    • Add whole spices (peppercorns, bay leaf, cardamom, cinnamon, cloves) and sauté until aromatic.
    • Stir in the cashews and fry until golden.
    • Add sliced onions and sauté until soft.
    • Mix in crushed ginger-garlic and slit green chilies, cooking for 2 minutes.

    Add chopped vegetables
    and sauté for 2 minutes.
    • Pour in the prepared coconut milk, soaked rice, and salt. Stir gently.
    • Bring to a boil, reduce heat to low, cover, and cook for 15 minutes.
    • Turn off the heat and let it rest for another 15 minutes.
    • Garnish with chopped coriander leaves and fluff gently with a fork.

    • In a bowl, whisk yogurt until smooth.
    • Mix in cucumber, tomato, shallots, salt, green chilies, and coriander leaves.
