Healthy, flavorful, and tasty vegetable pulao made with long-grain rice and coconut milk.

Soak the Rice:
• Wash the basmati rice thoroughly and soak it in water for 30 minutes. - 2
Prepare the Coconut Milk Mixture:
• In a bowl, combine thick coconut milk with water. Stir well and set aside. - 3

Prepare the Ingredients:
• Rinse and chop all vegetables.
• Crush ginger and garlic in a mortar and pestle.
• Keep all spices and cashews ready. - 5
Cook the Coconut Milk Pulao:
• Heat coconut oil in a non-stick pan. Add cumin and fennel seeds, letting them sizzle.
• Add whole spices (peppercorns, bay leaf, cardamom, cinnamon, cloves) and sauté until aromatic.
• Stir in the cashews and fry until golden.
• Add sliced onions and sauté until soft.
• Mix in crushed ginger-garlic and slit green chilies, cooking for 2 minutes. - 6

Add chopped vegetables
and sauté for 2 minutes.
• Pour in the prepared coconut milk, soaked rice, and salt. Stir gently.
• Bring to a boil, reduce heat to low, cover, and cook for 15 minutes.
• Turn off the heat and let it rest for another 15 minutes.
• Garnish with chopped coriander leaves and fluff gently with a fork. - 9

Prepare the Raita:
• In a bowl, whisk yogurt until smooth.
• Mix in cucumber, tomato, shallots, salt, green chilies, and coriander leaves. - 13

• Enjoy the Coconut Milk Vegetable Pulao with the refreshing raita.Chef’s Tip: For added richness, toast the cashews and coconut milk mixture together before adding it to the pulao.
