Couscous with Peas (Mesfouf) 🫛🫛🫛

Steam the peas and season with salt. Place them in a saucepan, add the sugar and margarine, and mix well.

Place the couscous in a bowl. Add enough water to cover it and let it absorb. Fluff the couscous with your hands, then add the oil and mix well. Steam the couscous for the first time.

Add the clarified butter, salt, and a little water to the couscous. Mix well, let it rest briefly, then steam it for the second time.

Transfer the couscous to a large bowl. Add the peas and margarine, mix everything together, then serve on a platter. Traditionally served with buttermilk. Enjoy!
