Ingredients

4 servings
  • 1 cupspring onion chopped
  • 1small red onion sliced finely
  • 3-4green chillies chopped finely
  • 2 tbspcoriander chopped finely
  • 1/2 cupbesan (chickpea flour)
  • 2 tbspcornflour
  • 1/4 tspturmeric powder
  • 1/2 tspred chilli powder
  • 1/2 tspcumin powder
  • 1/2 tspgaram masala powder
  • 1 tspajwain (carom seeds)
  • 1/2 tspbaking powder
  • As neededoil for deep frying

    Wash the finely chopped spring onions and drain water completely Combine the chopped spring onions along with the chopped bulbs, 1 small onion sliced finely,chopped green chillies,coriander, salt to taste and baking powder.Mix well.

    Add the dry spices, carom seeds or ajwain.Mix all the spices with the vegetables and set aside for 5 minutes.This resting period allows the spring onions and onions to release water.Later add corn flour and gram flour and mix well.The batter should be thick and should hold together and not runny.

    Heat oil in a deep frying pan over medium.heat.Carefully drop small portions of the batter in hot oil.Fry in batches.Fry them in medium heat, turning them occasionally till golden brown and crispy.Remove them with a slotted spoon and drain them on paper napkins to remove excess oil.Serve the Spring Onion Pakora hot with green chutney or Hot and Sweet Tomato Chilli Sauce. Enjoy this crispy fried snack with a cup of tea or as a side with dal and rice and relish.
