This is not Risotto but a creamy mushroom rice. I used brown rice
Steps

Wash button mushroom and quarter, wash rice and wash and peel, slice onions, set aside

In a wok heat extra virgin olive oil, add sliced onion and salt and chopped parsley, stir to soften, add mushroom and stir to soften.

Once mushroom is softened, add 50 ml cooking white wine, and mix, add rice and coat well.

When wine evaporates, add chicken broth and stir well, reduce flame and let rice cook. Add 50 ml wine and let rice cook

When rice is cooked, add cream and keep stirring, add grated mozzarella cheese and stir well. Set aside
- 6
Plate with grated mozzarella cheese, parsley and fried onions. Enjoy creamy mushroom rice
