Red Bean Soup with Glutinous Rice Balls

Rinse the red beans. In a pot, add enough water to cover the beans by about 2 inches (fill the inner pot to about 80% full). Add 2 bowls of water to the outer pot if using a rice cooker. Cook for about 70 minutes until the beans are soft. Stir in sugar to taste, mix well, and let sit for another 10 minutes.

Bring a pot of water to a boil. Add the small glutinous rice balls and stir gently. Cook until all the rice balls float to the surface, then continue cooking for another 8 minutes. Remove the rice balls and place them in cold boiled water to rinse off any excess starch. This will make them cleaner and chewier.

Spoon the red bean soup into bowls. Add the glutinous rice balls, mix gently, and enjoy.
