Cowboy Cornbread Casserole

Ingredients

  1. 1Jiffy corn bread box
  2. 14 ozCorn (1 can)
  3. 8.25 ozCream of Corn
  4. 2 lbsground beef
  5. 1 CanKidney beans (14.5oz)
  6. Packtaco seasoning
  7. 2 Cupssalsa (1 jar)
  8. 2 tbspmilk
  9. 1/4Sour cream
  10. 1/2 cupwater
  11. 1 1/2 cupcheese (we use fiesta blend and measure with our heart)
  12. Salt, pepper, garlic powder

Cooking Instructions

    Brown your meat and drain the grease

    Heat your oven to 350

  3. 3

    In a large bowl combine your meat, salsa, taco seasoning, kidney beans, corn & seasonings.

    Grease your baking pan and add the mixture to your pan. Cover with a good layer of shredded cheese.

    In a separate bowl - combine your cornbread mix, cream of corn, milk, & sour cream.

    Evenly spread cornbread mixture onto the cheese layer. Do not cover. Bake for 35-40 minutes and broil for an extra minute or so to make sure your top is nice and done.

    Top with sour cream if desired!

What kind of salsa did you use? I did what it said and tried making this twice and both times the cornbread wouldn't cook all the way. I tried putting it the second time an even thinner layer and it didn't either. First time I ended up eating around the cornbread and it tasted good. But I can't seem to get it to cook correctly
