Bring water to a boil in a large pot. Add the ground cumin. Place the whole cabbage (with the tough core removed) into the boiling water. This will help the leaves soften and separate easily. Remove the leaves one by one as they loosen.

Cut away the tough parts from each cabbage leaf and slice each leaf in half.

Mix all the filling ingredients in a large bowl. Place some filling on each cabbage leaf and roll them up tightly in a spiral shape.

Line the bottom of a deep baking dish with some cabbage leaves. Arrange the stuffed cabbage rolls snugly side by side in the dish.

Sprinkle the spices and pour the cooking broth mixture over the cabbage rolls. Add enough water to cover the rolls completely.

Cover the dish with parchment paper, then with aluminum foil. Bake in a wood-fired oven or a regular gas oven, if that's what you have, until fully cooked.
