Yum Woon Sen (Thai Glass Noodle Salad)

Bring the water to a boil. Add the soaked glass noodles and cook until done. Remove and place in a bowl.

Add the ground pork to the boiling water and cook until fully cooked. Remove and add to the bowl with the noodles.

Blanch the white wood ear mushrooms until cooked, then add to the bowl with the noodles. Season with fish sauce, sugar, and lime juice. Toss everything together. Add the shallots and cilantro, toss again, and serve.
