Classic crêpes
This is the simplest recipe for milk based crepes

While the skillet is preheating, whisk the eggs and milk together in a large bowl.

Gradually add the sifted flour, salt, and sugar to the mixture, whisking by hand or using a hand mixer until the batter is smooth and free of lumps.

Finally, stir in your preferred oil (I usually choose sunflower oil) until well combined.

Although I don’t do it personally, some people find it helpful to lightly grease the pan with cooking spray or left oil before pouring in the first batter scoop

Pour just enough batter into the hot skillet to cover the bottom, adjusting the amount based on your skillet size. Unlike pancakes, crepes should be thin and delicate. Cook each crepe for about 40 seconds per side, or until the bottom is set and golden. Flip and cook the other side until golden as well.
