This recipe is one of many from Jamie Oliver, my favourite British chef. This time he suggests giving the turkey the flavours of Christmas and New Year with the help of an interesting cranberry butter. It turns out very tasty.

Prepare the turkey. Wash and dry if necessary. Remove the giblets, fold the wings.

In a suitable baking dish, peel and chop any vegetables for the pillow. I used leeks, carrots, green and yellow peppers, and winter radish (it's sweet). Put the offal (heart, liver, and neck) in there too.

For the flavored butter, place the cranberries and butter in a blender. Add fresh sage, rosemary, thyme, and lavender. The zest of the clementine and lemon. And salt and ground pepper. Blend until smooth.

Carefully insert the butter mixture under the turkey skin and distribute it evenly. And distribute the rest on top.

Place fresh herb sprigs and one cut clementine inside the turkey. Place the turkey on a vegetable tray. Pour the wine over it. Cover well with foil and place in the oven at 190 degrees for three hours.

My turkey was listed as taking 3 hours and 30 minutes. I pulled it out after three hours, removed the foil, and checked for doneness with a needle thermometer. 73 degrees. It was done.

Return the turkey to the oven without foil and bake for another 10-20 minutes, basting with the juices. Once the turkey is browned, arrange the bacon strips in a lattice pattern. Bake until the bacon is cooked through.

The vegetables that the turkey roasted on make a great sauce. Just put them in a pan, add some of the turkey juices and puree with an immersion mixer. Dilute with boiling water to the desired consistency. Add salt and spices to taste. A couple of tablespoons of cranberry sauce and cook over medium heat for ten minutes. There are other ways to make a great sauce, but this one is very simple.
