This is a savory twist on traditional syrniky. The choice of mozzarella is flexible—while I prefer a mild-tasting cheese, any dry, good-melting cheese can work and even add an interesting twist to the recipe.

Cooking Instructions

Preheat the pan. Drain the cottage cheese, and if it has a grainy texture, use an immersion blender to smooth it out.

In a large bowl, mix the cottage cheese and egg. Add 2 tablespoons of flour and salt, and stir to combine.

Add the finely grated mozzarella and chopped dill to the mixture, and mix well.

Generously dust a cutting board with flour and transfer the mixture onto it.

Roll the cheese mixture into a cylinder, making sure it's evenly coated in flour.

Cut the rolled mixture into your desired portion sizes, covering the sides of each piece with flour. Shape them, if necessary, to make them more round.

Lightly grease the pan with cooking spray or oil, then place the cheese pancakes in the pan. Cover and cook on medium heat for about 2 minutes per side, or until the edges are firm and golden.

Serve with sour cream or lightly salted salmon for a delicious touch.
