Slice the lemon grass, shallot, chili and place it into the blender/ chopper. Mix it with oil into paste form. Add tomato paste, paprika powder, curcuma powder, curry powder into it and mix it until it is fine.

In a cooking pot, add 3 tbsp oil and add the sauce paste into it. Stir fry it the sauce for 2-4 minutes. Add 500ml coconut milk into it. Mix it well, add 500ml chicken broth or water into it. Let it cook slowly. Add salt and pepper to taste.

In the mean time, prepare the vegetable and chicken. Slice all of them into cubes or bites size

Slowly place the chicken into the sauce and cook it with the sauce, add the longest cook vegetables such as carrot, eggplant and green beans first. After half-way cook, add in the rest of vegetables such as paprika, zucchini, peas and red onion.

Let it cook until all vegetables are well cooked and season it to taste with salt.

Do not forget to cook rice in between.
