The butter makes the portobello, they absorb any flavors. Rich, creamy butters like vegan cashew or clarified grass fed dairy are my favorites. I use them as a substitute for potatoes, rice or noodles when making a rich, filling dinner, like steaks.

Ingredients

  1. 1 poundportobello mushrooms, one inch slices
  2. 1Olive oil spray to coat cast iron skillet
  3. 4 Tbscashew or dairy butter
  4. 1 Tspwhite pepper
  5. 1 Tspflaked seasalt
  6. Equipment: cast iron skillet
  7. Cost: mushrooms $4, other $1, $2.50 per person

Cooking Instructions

15 minutes
  1. 1

    Heat cast iron skillet to 200F degrees in oven, spray with olive oil, lay slices of mushroom down, cook slowly.

    When fragrant, melt butter and bake till golden. Flip mushrooms, bake other side. Serve and enjoy.
