This ice cream is absolutely delicious. I got a recipe guidance from one of the cookpad members and then I carried on with my own creativity considering the availability of the ingredients.
Basically it requires all the sweet pan ingredients. Gulkand, paan leaves and sauf are the key ingredient to get the flavour.

Ingredients

1 hr or less
1½ ltr
  • 3 cupswhipping cream
  • 1/3 cupcondensed milk
  • 3-4 tbspsugar (add the 4th sp only if required after adding the sweet pan ingredients)
  • 1/2 tspgreen colour (take just 1-2 drops if using gel colour)
  • 1 tsprose essence or vanilla essence
  • 50 leavespaan
  • 3 tbspfennel seeds
  • 3-4 tbspgulkand
  • 1 tsppan chutney (optional, but recommend for distinct flavor)
  • 4-5 tbsptuti fruiti
  • 2-3 tbspcolourful sweet sauf
  • 2-3 tbspsugar quoted sauf

Steps

  1. 1

    Coarsely grind pan leaves and sauf.

    Combine with a spoon the sugar, condensed milk, whipping cream, rose essence and green colour. We want the sugar grains to dissolve before we start to whip. The mixture should look homogeneously green.

    Start to whip on the lowest speed. You may increase the speed after a minute or two. Whip until you get the thickness of the mixture like that of the melted ice cream.

    Add the grinder pan leaves mixed with sauf and rest of the ingredients EXCEPT tuti fruiti and colourful sweet sauf. Combine well. You may run a round or two if the whisk.

    Transfer the mixture in a container. Garnish with shredded pan leaves. Lightly mix and freeze the mixture until it is semi solid. Combine gently so that the paan toppings that sank at the bottom are distributed evenly.
