Beef Massaman Curry - Kaeng Matsaman Beef Massaman Curry - Kaeng Matsaman
This dish was chosen to be No.1 in the "World's Most Delicious Foods Top 50" in CNNGo. This is a popular curry in our house. I substituted tamarind with lemon juice. Massaman means Muslims. The ☆ Indian spices are originally brought from Thailand by Muslim traders. You can make this in the same way as you make green curry or yellow curry. The secret is to sauté the curry paste and mix in the coconut milk in Step 3 and Step 4. I used the ☆ spices in Step 2 to increase the fragrance, but you can omit them as they are already included in the curry paste. I added lemon juice instead of tamarind. California Farm Pork Loin Curry Dinner California Farm Pork Loin Curry Dinner
Curry sauce is perfect for both marinading and cooking. All the flavors, and no waste. Just like in restaurants, where they ask you if you want mild, medium or hot curry, this recipe makes mild, medium or hot.The pork tenderloin is marinaded overnight, and sauteed the next day for dinner. The spiciness is from small red thai peppers: one, two or three. You can also use red chili powder: 1/4 teaspoon, 1/2 teaspoon, or 3/4 teaspoon. The marinade is turned into gravy for the meat. Mango chutney is a sweet/sour chutney, which tempers the curry. Great combination. And your dish will always be perfect, because when you taste it before serving, and it is too hot, you add yoghurt to make it milder. And if it is too mild, you add thai peppers.#CA2025 Hobby Horseman -
Red curry pork noodles Red curry pork noodles
The past few months, it's been all about Indian-style curries in our house, so the time seemed right to get back to some Thai-inspired flavours. Normally I would've made my own curry paste, but having been Halloween, time was at a premium and convenience won out. The recipe below is pretty mild heat-wise (for my daughter), so feel free to throw a chili or two into the mix to spice it up. Robert Gonzal -
