Ingredients

4-6 servings
  1. 1 cancoconut milk
  2. 2 (4 oz)cans Maesri Massaman Curry paste
  3. Cold Water
  4. 1medium sweet onion, thinly diced (prefer Vidalia)
  5. 1/2 lb.baby carrots, peeled
  6. 4small russet potatoes, peeled & large cubed
  7. Olive oil
  8. Marinaded Pork
  9. 1pork tenderloin, thinly sliced (against the grain)
  10. 2 tbspcornstarch
  11. 1 tbspcooking sherry
  12. 1 tspsugar
  13. 1 tspsalt
  14. Tools: Large Stockpot with Lid

Cooking Instructions

    Mix sliced pork with marinade ingredients. Mix with spoon. Mix should feel slightly sticky. Set aside.

    Add coconut milk to stockpot and bring to rolling boil under medium-high heat. Add curry, stirring to dissolve (below).

    Add cold water to set thickness you want (we use 6 cups) plus 4 cups more.

    Cover with lid and bring to boil, stirring occasionally.

    Add diced onions and carrots. Stir and cover with partial lid. Allow to cook 14 minutes.

    Add cubed potatoes and cook another 10 minutes, until potatoes are slightly undercooked.

    Remove vegetables from broth using large sieve spoon. Set aside.

    Cover with lid. Bring curry base to rolling boil using high heat.

    Add enough olive oil to marinaded meat to gloss. Stir.

    Add vegetables back in.

    Add meat mixture to curry broth in small batches for quick cook.

    Stir and cook until color changes.

    Warm for 5 minutes, then ready to serve. Enjoy with a side of steamed jasmine rice.
