  • 3.5 ozfresh watermeal (about 100 grams)
  • 3.5 ozfresh shiitake mushrooms, straw mushrooms, or any fresh mushrooms (about 100 grams)
  • 2.8 ozground dried chili (about 80 grams)
  • 2.1 ozfried shallots (about 60 grams)
  • 1 ozfried garlic (about 30 grams)
  • 2 tablespoonsfish sauce (about 30 grams)
  • 7.8 ozpalm sugar or coconut sugar (about 220 grams)
  • 1/2 cuptamarind paste (about 80 grams)
  • 0.9 ozsweet shrimp paste (about 25 grams)
  • 1 teaspoonsalt (about 5 grams)
  • 0.9 ozdried shrimp, soaked in water (about 25 grams)
  • 1 1/4 cupsoil (about 300 grams)

    Blend the watermeal, mushrooms, ground dried chili, fried shallots, fried garlic, salt, sweet shrimp paste, and soaked dried shrimp in a blender until smooth.

    Stir-fry the chili paste mixture in oil. Add fish sauce, palm sugar, and tamarind paste. Cook until fragrant and adjust the seasoning to taste.
