Salad - appetizer of baked beetroot and cheese

Simple and delicious. Can be served on toast, in tartlets, in portions in glasses or in a salad bowl.
Cooking time does not include baking the beets.

Grate the baked beets on a coarse grater.

Add garlic, grated on a fine grater or passed through a press.

Finely chop the parsley and dill with a knife. Add to the salad. Salt and season to taste. Mix with mayonnaise.

Grate the cheese on a coarse grater. I have Cheddar. Add to the salad.

When serving, sprinkle the salad with finely grated hard Parmesan and dill.
