Ingredients

4 servings
  • 4 cupshomemade chicken stock
  • 1-2 lbsboneless skinless chicken thighs, thinly sliced
  • 1 tspkosher salt
  • 2 (13.5 oz)cans coconut milk
  • 6-10makrut lime leaves, torn
  • 3 inchknob of galangal, sliced
  • 2 stalkslemongrass, cut into 1-2 inch pieces
  • 2-4fresh Thai chilies
  • 2 tbspfish sauce, plus more to taste
  • 1 tbsppalm sugar or regular sugar
  • 1 lbmushrooms (oyster, shimeji, shiitake, whatever mix you'd like!)
  • Lime juice from 2 limes, plus more to taste
  • Jasmine rice for serving
  • Cilantro for garnish
  • Note: homemade chicken stock is preferred, but if you don't have it on hand then water works just fine. Replace stock with water in step 1 and add 1tsp kosher salt
  • Note: makrut lime leaves, lemongrass, and galangal are not meant to be eaten. Fish them out before eating or cook in a mesh herb infuser for easier removal

    In a Dutch oven or a large pot, add the chicken stock, sliced chicken thighs, and salt. Bring to a simmer for about 10 minutes.

    Add the coconut milk, makrut lime leaves, galangal, lemongrass, chilies, fish sauce, and palm sugar. Bring to a boil, and once boiling lower the heat to simmer 5-10 min.

    Add mushrooms and cook for about 5 minutes until cooked through.

    Turn off the heat and add lime juice to taste. Feel free to add a little more fish sauce if needed too.

    Serve with Jasmine rice and garnish with cilantro.
