Steps

Take your shop bought or homemade puff pastry from the fridge. Roll out your pastry and Slice the dough into long skinny triangles from long edge to long edge.

Make a slice in the middle of the long edge of your triangle and separate it slightly (shown below)
Start to roll upwards towards the tip of the triangle, continue with the rest of your triangles.

Transfer all of your mini croissants to a prepared oven proof pan.
Leave your croissants to rise.
Half hour -1 hour. - 4
Preheat your oven 200C
Brush all your croissants with
either egg wash or melted butter. (I used butter)
Lastly sprinkle over some salt and sugar. - 5
Bake for 15-18 minutes or until croissants are golden and flaky.
