#CHEFFEB I prepared the koottu with seven vegetables on the day of Arudhra darisanam, day for the devotion of Lord Shiva . You can make this koottu loaded with healthy vegetables on any day and serve with rice or roti. Easy to make aromatic Flavorful healthy koottu Rich in proteins, minerals and vitamins. I had to use frozen vegetables as fresh vegetables were not available of the day I prepared the koottu. You may use fresh veggies since there is no dearth for fresh veggies in India

Collect the necessary materials. Place near the cooking area

Collect the necessary materials. Place near the cooking area. Cook 1/2c of mung with 2c of water in a bowl in a pressure cooker following manufacturer's instructions. While dal is cooking attend to rest of chores.

On a microwave safe plate or bowl cook the frozen veggies in a microwave for 5 minutes/until soft

Paste: Roast chana, urad dal in a skillet over medium heat until the dals turn golden color. Lastly add the dried chili peppers.. Turn off the stove when aromatic.. Soak the roasted ingredients in 1/2c water - 10 minutes. Blend the soaked ingredients with coconut, ginger, green chilies to make a paste

Heat oil in a heavy bottomed pan over medium heat. Add mustard seeds. Let them burst open. Then stir in cumin and fenugreek seeds, roast about a minute. Add asafetida, curry leaves. Add the cooked vegetables and 4c of water, Bring it to boil. Sir in urmeic powder. Simmer. Add the cooked mung. Mix. Continue cooking over simmering heat for 2-3 minutes. Stir in the paste. Mix. Continue cooking over simmering heat for 2-3 minutes.
Salt to taste. Turn off the stove. - 6
Garnish with cilantro. Flavorful, aromatic nutritious kootu is ready. Taste and serve. Transfer to a serving bowl, You may serve the koottu with rice, roti, chapati, dosa, or adai. Enjoy
