Made slow cooked carrot Halwa dish in tricolors. Need pateince to cook this entire recipe to have 'Sweet Fruit of Pateince'
Wanted to have rich vibrant colors in the recipe without using artificial colors.
It came out just perfect in taste and enjoyed by all. Tried my best to make it in natural tricolor concept. Hope you like it.

Ingredients

  1. 1 and 1/2 kg red carrots
  2. 1 kgmilk (boiled already)
  3. 1 cupsugar
  4. 1 teaspoonghee
  5. 10-15 gramsPumpkin seeds
  6. 10-15chopped almonds
  7. For making khoya
  8. 1 cupmilk
  9. 2 tablespoonsghee
  10. 40 gramspowdered milk

    Assemble the ingredients to make khoya. Firstly, heat ghee in a pan. Then add milk. Keep on stirring on medium flame for 2 to 3 minutes until ghee and milk completely mixed.

    Further, add powdered milk within the ghee and milk mixture. Keep on stirring to avoid lumps and getting stick at the base and burned.

    Cook for few minutes until it begins to thicken. Keep on stirring for five to ten minutes on low heat until it turns into granular texture.

    Keep on stirring for few more minutes and it is ready.Transfer it to bowl. Keep aside and allow to cool. It gets stiff upon cooling.
    Take washed and peeled carrots to make Halwa. Start grating all the carrots.
    Tip: You may skip making khoya at home or use store bought to save time.

    Assemble all the ingredients to make gajar Halwa.Heat 1 teaspoon ghee in a kadhai on low flame. Add chopped almonds and saute for few minutes. Transfer it to bowl and keep aside.
    Tip: Sugar is not added in the assembled ingredients. Added in later steps to have exact quantity to be added.

    Then add Pumpkin seeds and give it a stir just for few seconds. They will get little crispy.Transfer to bowl and keep aside.
    Tip: 1) Almonds or Pumpkin seeds can be saute together but it is done separately to make the dish in tricolors.
    2) Sauting Pumpkin seeds is optional. We may use Pumpkin seeds as it is.

    Add Milk within the same kadhai and bring to boil. Start adding grated carrots within the milk.

    Tip: 1) Better to add carrots in the milk in batches. When one batch is soaked within the milk, then add more carrots. Allow the carrots to mix within the milk slowly. It helps to know the exact and appropriate quantity of the milk. Add more milk if required.

    Mix well and keep on stirring in between. Allow to cook until the entire milk will be soaked within the carrots. The quantity of the milk starts decreasing when cooked slowly.

    Allow to cook on low flame and keep stirring in between to prevent it from sticking at the base. The milk quantity will be reduced by itself upon slow cooking.
    Tip: Stirring often prevents from getting it burned or sticking at the base as if it gets burned, it may spoil the entire dish.

    Add 1 cup of sugar when just few amount of milk is left within.

    Mix well and allow to cook until the milk completely disappears and soaked by carrots. white minute dots of natural khoya will be automatically seemed upon carrots.Stirring often is required at this step to avoid sticking at the base.

    Add Chopped almonds. Mix well and it is ready with a natural vibrant orange color. Transfer it to bowl.
    Tip : Add khoya or pumpkin seeds at this step but keeping it seprate to form it in Tricolors.

    Assemble all three prepared ingredients of tri colors of our National Flag. Carrots of orange color. White color khoya. And Pumpkin seeds in green color. While serving firstly, added orange color carrots, then Khoya and Pumpkin seeds.
    To have perfect white color, layered khoya with just a half teaspoon of Malai just to cover the color as it can be easily paired with khoya. Toped with almond in the centre.
