Ingredients

4 people
  • 1/2 cupasparagus or to your liking (can also use broccoli, spinach, mushrooms, tomatoes, or any other veggie of choice)
  • Optional cilantro or parsley for garnish
  • Pasta
  • 8 cupswater
  • PinchSalt (optional)
  • 8 ozchickpea pasta (Banza is an amazing brand) or any pasta this one just has more protein and is gluten free
  • Teaspoonolive oil
  • Chicken
  • 2 tablespoonsPaprika
  • 2 tablespoonsgarlic powder
  • 2 tablespoonsonion powder
  • Teaspoonthyme
  • Teaspoonoregano
  • 1/2 teaspoonPepper
  • PinchSalt (optional)
  • 3chicken breasts
  • 1 tablespoonolive oil
  • 1 tablespooncanola oil
  • Alfredo Sauce
  • 1 1/2 cupsany fat Greek yogurt
  • 1.5 tablespoonsbaking soda
  • 1/2 teaspoonpepper
  • 1/2 cupparmesan
  • 3/4 cuphalf-and-half or heavy cream
  • Tablespoonsugar for sweetness (optional)

  1. 1

    Cut asparagus into pieces, add olive oil in the pan, saute the asparagus until it is soft, drain excess oil, and place in bowl.

  2. 2

    Boil the pasta water and include salt if you desire.

  3. 3

    Add the pasta and let it cook for 8-10 minutes or recommended time.

  4. 4

    Strain the water, put in a bowl, and mix a little olive oil so the noodles don't stick.

  5. 5

    Mix your spices and leave a tablespoon for Alfredo sauce

  6. 6

    Cut up your defrosted chicken breast into smaller pieces and coat it in the spices

  7. 7

    Heat up pan with olive oil and canola oil, add the chicken and cook it until the inside is no longer pink

  8. 8

    Put the chicken in a bowl, mix the Alfredo ingredients, and add them to the pan

  9. 9

    Little bubbles should form and you can add the asparagus, chicken, and noodles

  10. 10

    Garnish and serve😍🥰
