Ingredients

25 minutes not including tofu press time
1-2 people
  • Tofu
  • 6-9 ozextra firm tofu
  • 2 tablespoonscornstarch
  • 1 tablespoonlow-sodium soy sauce
  • Vegetables 🥦
  • 2 cupsVegetable medley bag or something involving, (carrots, broccoli, cauliflower, squash)
  • 1 tablespoonoregano
  • 1 tablespoongrated ginger
  • Teaspoonchile powder
  • Teaspoonpaprika
  • Teaspoonthyme
  • Pepper
  • Tablespoonolive oil
  • Tablespooncanola oil
  • Optional garlic or onion

Steps

25 minutes not including tofu press time
  1. 1

    Use a tofu presser or wrap the tofu in a paper towel or towel after draining and place a pan or heavy object on top so the tofu can release liquid. Leave in this position for 20-30 min.

  2. 2

    While waiting preheat the oven to 350 F and line a baking sheet with parchment paper.

  3. 3

    Mix the cornstarch and soy sauce.

  4. 4

    When tofu is done cut it into small bite sized pieces and mix with cornstarch and soy mixture.

  5. 5

    Place on baking sheet and cook for 25 minutes or until slightly crispy.

  6. 6

    Preheat a pan with canola and olive oil and put in all your vegetables and seasonings, mix often.

  7. 7

    Make sure your vegetables are warm before mixing in your finished tofu and enjoying!
