Rinse the pork ribs. In a pot with cold water, add a little rice wine and simmer over low heat to remove impurities. Rinse and drain. Peel the potatoes and carrot, then cut into chunks. Cut the onion into pieces. Smash the garlic, peel, and slice it. Slice the ginger. Diagonally slice the chili pepper. Cut the white part of the green onions into sections and chop the green part into coarse pieces.

Heat a pan and add olive oil. Sauté the pork ribs, white part of the green onions, ginger slices, and garlic slices until fragrant. Add the bean paste, soy sauce, sugar, and rice wine. Stir-fry until the pork ribs are evenly colored.

Add the potatoes, carrot, and onion. Stir-fry evenly. Add boiling water to cover the pork ribs and potatoes. Bring to a boil over high heat.

Cover the pot, reduce to low heat, and simmer for 30 minutes until the pork ribs and potatoes are cooked through. Adjust the seasoning of the sauce if needed. Sprinkle with chopped green onions and chili pepper, stir well, and serve.
