Authentic Greek Salad (Horiatiki)

Greek Horiatiki salad is very popular throughout Greece and is also well known abroad. It’s made with tomatoes, cucumber, feta cheese, olives, onion, green bell pepper, olive oil, oregano, and salt. Sometimes capers are added (very often in the Cyclades), as well as vinegar, and parsley for garnish (mainly in Northern Greece), along with barley rusks. In many Greek islands and other regions, local cheeses may be used instead of feta. In some places abroad, like the US, a variation of Horiatiki salad includes lettuce. The name "Horiatiki" refers to village-style cooking, meaning the traditional cuisine of Greek villages.
