Ingredients

35 minutes
4 servings
  • 500 grams (4 nos)Carrot
  • 2 tablespoonsghee
  • 1liter full fat milk
  • 2 tablespoonrice soaked
  • 1/4 cupsugar
  • 2 tablespoonsdry nuts chopped
  • 1/4 teaspooncardamom powder
  • 1/4 teaspoonsaffron strands soaked in 1 tablespoon warm milk

  1. 1

    Firstly, wash and peel the carrot. Crush the soaked rice in mixer grinder on 2 times pulse mode.

    Heat ghee in a nonstick pan. Add grated carrot and saute for few minutes until the carrot soften. Then take it out and keep aside. Boil the milk in same pan and allow bring it to boil.

    Now turn heat to low and add crushed rice and stir it well. When the rice 50% cooked (about 10 minutes) add sauted carrot to it and stir it well.Cook this mixture till it reduce to ⅓.stir continuesly.

    Now add sugar and mix well.

    Add dry nuts and cardamom powder. Add soaked saffron to the boiling kheer. mix well and bring to simmer.

    Carrot Kheer is ready. Serve it hot or cold.
